Mix up a Summer Cake

Caleb found one of those monster zucchinis this evening. You know the one. It hides somehow. You think you've got them all picked. Then, there is the biggie just waiting to grace your table with loads of zucchini goodness.

I was pondering on what to make with our big find of the day. My youngest, Eli, said: "Oh please, make that zucchini cake again." I knew right off he was talking about the chocolate zucchini cake. If you want to have your cake and eat it too or rather very sinfully ingest those zucchinis and make your kids really smile, then this one is thumbs up.

Chocolate Zucchini Squash Cake Recipe

Ingredients:

1 cup butter or margarine
2 1/2 cups sugar
3 cups plain flour
1/2 cup baking cocoa
2 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
4 eggs
2 tsp. vanilla
1 cup milk
3 cups zucchini, shredded

Directions:

Cream butter and sugar. Add eggs and beat. Combine all dry ingredients. Pour part of dry stuff in and mix. Pour in some milk. Mix. Continue until all dry stuff and milk are mixed in. Add vanilla. Last thing--add the zucchini. Mix.

Bake at 350 for about 40 minutes if using a long flat cake pan about 9 x 13 inches I think. It's a sheet type cake.

You can serve this cake plain, but it's really good with a sweet topping.

Sprinkle top with powdered sugar or frost with your favorite icing. Canned frosting is fine. I like Summer Squash Cake Frosting, so here’s the recipe for that too.

Summer Squash Cake Frosting Recipe 

Ingredients:

1/2 cup margarine
3 T cocoa
3 T Coca Cola (or Pepsi)
1 box (1 pound) powdered sugar
1 cup nuts (optional)
1 tsp vanilla

Directions:  

Bring margarine, cocoa and cola to boil. Take off heat. Mix in other items. Pour over cake while it's still warm--between 5 and 10 minutes after it comes out of the oven.

Have fun with your zucchini. Anything so named should be a blast right? Try out the cake and frost it up if you have a real sweet tooth. It's a real winner at my house, and I'll bet it will be at your house too.

Quick Tip

One quick tip/note. If you're growing yellow or other summer squash, you can use those in both my recipes. I do these with yellow straight, crook neck, and with patty pan.
