Fried Zucchini Patty Recipe

Zucchini reproduce like rabbits as you know if you grow them. If you have a plant or two, then you probably have enough zucchini to feed the neighborhood. You’ve probably exhausted your zuke recipes and are looking for new ways to serve the vegetable that just keeps on giving.
I’ve been trying out new ways to serve up zucchini. And, let me also note that other summer squash can be used in any recipe calling for zucchini. I’ve been using zucchini, yellow straight, and patty pan. The lighter colored squash are a bit milder, but it’s really hard to tell the difference especially when the squashes are cooked.
One of our summer favorites for our squash is:
Fried Zucchini Patty Recipe
Ingredients:
2 slices bread (pulled apart in small pieces)
1 T. Italian seasoning
1 T. seasoned salt (Penzy’s 4/S is great)
2 eggs (beaten up)
2 T. mayonnaise (or Miracle Whip is you like a sweeter taste)
2 tsp. Old Bay seasoning (yes—the seafood seasoning)
2 cups zucchini (grated)
Directions:
Tear up the bread (heels are fine too). Add Italian seasoning and seasoned salt. Beat up eggs and add. Mix in mayonnaise. Sprinkle and stir in Old Bay. Mix in zucchini. Put oil in a frying pan and heat to around 325 (which a medium hot heat). Pour in about ¼ cup of mixture. This will look kind of like potato pancakes. Flip over when sides are good and bubbly. Serve and enjoy.
Here are a few tips to help out too:
If you have loads of squash, then you can freeze baggies with 2 cups for this recipe and make the treat later when the squash is finished up.
The hand graters are really labor intensive. I experimented around and found that the Tupperware chopper machine works great on squash.
